  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice (about 23 limes)
  • 4 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon paprika
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper (optional, for heat)
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a medium-sized bowl, combine the olive oil and fresh lime juice. Add the minced garlic, ground cumin, paprika, dried oregano, salt, black pepper, and cayenne pepper (if using). Whisk until well combined.
  2. Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Massage the marinade into the chicken. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat the grill to medium-high heat. If using a charcoal grill, ensure the coals are hot and ashy. For a gas grill, heat for about 10-15 minutes. Remove the chicken from the refrigerator and let it sit at room temperature for 15-20 minutes.
  4. Lightly oil the grill grates. Place the marinated chicken breasts on the grill, leaving space between each piece. Grill for 6-7 minutes on one side without moving. Flip the chicken and grill for another 6-7 minutes, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes.
  5. Prepare a serving platter. Slice the chicken or serve whole, garnishing with freshly chopped cilantro. Serve with lime wedges on the side for an extra burst of flavor.
