  • 1 cup of crushed graham crackers
  • 1/2 cup of unsalted butter, melted
  • 1/2 cup of powdered sugar
  • 1/2 cup of chopped pistachios (for garnish)
  • 1 teaspoon of vanilla extract
  • 1/4 cup of mini chocolate chips (optional)

Instructions

  1. In a large mixing bowl, combine the pistachio pudding mix and cold milk. Whisk for about 2 minutes until thickened and creamy. Set aside for 5 minutes to firm up.
  2. In a separate bowl, mix crushed graham crackers, melted butter, and powdered sugar until crumbly but holds together when pressed. Firmly press the mixture into the bottom of a 9×13 inch baking dish.
  3. Fold the whipped topping into the pudding mixture gently, adding in batches to keep it airy. Stir in the vanilla extract and, if desired, fold in mini chocolate chips.
  4. Pour the pistachio pudding mixture over the prepared graham cracker crust, spreading it evenly. Smooth the top with a spatula.
  5. Cover the dish with plastic wrap or aluminum foil and refrigerate for at least 2 hours to allow the flavors to meld and the dessert to set.
  6. After chilling, sprinkle chopped pistachios and optional mini chocolate chips on top. Slice into squares or scoop out portions to serve chilled.
