  • 4 slices of sourdough bread
  • 4 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 23 fresh jalapeños, roasted and chopped
  • 2 tablespoons mayonnaise
  • 2 tablespoons butter, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Place fresh jalapeños on a baking sheet lined with aluminum foil. Roast for 20-25 minutes, turning halfway, until skins are blistered and charred.
  2. Remove jalapeños from the oven and let cool for 10 minutes. Peel off charred skin, cut in half, remove seeds (if desired), and chop finely.
  3. In a medium bowl, combine softened cream cheese, shredded sharp cheddar, and shredded mozzarella. Mix until well combined.
  4. Fold the chopped roasted jalapeños into the cheese mixture, ensuring even distribution.
  5. Add garlic powder, onion powder, and a pinch of salt and pepper. Mix well and adjust seasoning to taste.
  6. Spread a thin layer of mayonnaise on one side of each slice of sourdough bread.
  7. On the non-mayo side of two slices, spread the cheese and jalapeño mixture generously. Top with remaining slices, mayo side up.
  8. Place a large skillet or griddle over medium heat and allow it to warm up.
  9. Carefully place the sandwiches in the skillet. Cook for 4-5 minutes until golden brown and crispy.
  10. Gently flip the sandwiches and cook for another 4-5 minutes. Adjust heat if necessary to prevent burning.
  11. Press down gently with a spatula to help the cheese melt evenly. Optionally, cover the skillet with a lid for a minute to trap heat.
  12. Remove sandwiches from the skillet and let sit for a minute before slicing in half.
  13. Sprinkle extra chopped jalapeños or a dash of hot sauce on top before serving. Pair with ranch or a tangy dipping sauce.
