- 4 slices of sourdough bread
- 4 oz cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 2–3 fresh jalapeños, roasted and chopped
- 2 tablespoons mayonnaise
- 2 tablespoons butter, softened
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Place fresh jalapeños on a baking sheet lined with aluminum foil. Roast for 20-25 minutes, turning halfway, until skins are blistered and charred.
- Remove jalapeños from the oven and let cool for 10 minutes. Peel off charred skin, cut in half, remove seeds (if desired), and chop finely.
- In a medium bowl, combine softened cream cheese, shredded sharp cheddar, and shredded mozzarella. Mix until well combined.
- Fold the chopped roasted jalapeños into the cheese mixture, ensuring even distribution.
- Add garlic powder, onion powder, and a pinch of salt and pepper. Mix well and adjust seasoning to taste.
- Spread a thin layer of mayonnaise on one side of each slice of sourdough bread.
- On the non-mayo side of two slices, spread the cheese and jalapeño mixture generously. Top with remaining slices, mayo side up.
- Place a large skillet or griddle over medium heat and allow it to warm up.
- Carefully place the sandwiches in the skillet. Cook for 4-5 minutes until golden brown and crispy.
- Gently flip the sandwiches and cook for another 4-5 minutes. Adjust heat if necessary to prevent burning.
- Press down gently with a spatula to help the cheese melt evenly. Optionally, cover the skillet with a lid for a minute to trap heat.
- Remove sandwiches from the skillet and let sit for a minute before slicing in half.
- Sprinkle extra chopped jalapeños or a dash of hot sauce on top before serving. Pair with ranch or a tangy dipping sauce.
