- 1 cup (2 sticks) unsalted butter
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- Approximately 40 saltine crackers (enough to cover a baking sheet in a single layer)
- 12 ounces semi-sweet chocolate chips (or milk chocolate, dark chocolate, or a combination!)
- Optional toppings: chopped nuts (pecans, walnuts, almonds), sprinkles, sea salt flakes, mini M&Ms, crushed pretzels
Instructions
- Preheat: Preheat your oven to 350°F (175°C).
- Prepare Baking Sheet: Line a baking sheet with parchment paper.
- Arrange Crackers: Arrange the saltine crackers in a single layer on the prepared baking sheet, close together but not overlapping.
- Melt Butter: In a medium saucepan, melt the butter over medium heat.
- Add Sugar: Once the butter is melted, add the granulated sugar. Stir constantly.
- Boil: Continue cooking and stirring the butter and sugar mixture until it comes to a boil.
- Caramelize: Reduce the heat slightly and continue to cook, stirring constantly, for about 3 minutes, until the mixture turns a golden amber color. Be careful not to burn.
- Add Vanilla: Remove the saucepan from the heat and stir in the vanilla extract.
- Pour Over Crackers: Immediately pour the hot toffee mixture evenly over the saltine crackers. Use a spatula to spread it evenly.
- Sprinkle Chocolate: Sprinkle the chocolate chips evenly over the hot toffee. Let them sit for a minute or two to soften.
- Spread Chocolate: Once the chocolate chips are softened, use a spatula to spread the melted chocolate evenly over the toffee.
- Add Toppings (Optional): Immediately sprinkle your desired toppings over the melted chocolate. Press nuts gently into the chocolate.
- Cool: Place the baking sheet in the refrigerator for at least 30 minutes, or until the toffee is completely set and hardened.
- Break: Once the toffee is hardened, remove it from the refrigerator and carefully break it into pieces.
- Store: Store the toffee in an airtight container at room temperature for up to a week.
