Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Approximately 40 saltine crackers (enough to cover a baking sheet in a single layer)
  • 12 ounces semi-sweet chocolate chips (or milk chocolate, dark chocolate, or a combination!)
  • Optional toppings: chopped nuts (pecans, walnuts, almonds), sprinkles, sea salt flakes, mini M&Ms, crushed pretzels

Instructions

  1. Preheat: Preheat your oven to 350°F (175°C).
  2. Prepare Baking Sheet: Line a baking sheet with parchment paper.
  3. Arrange Crackers: Arrange the saltine crackers in a single layer on the prepared baking sheet, close together but not overlapping.
  4. Melt Butter: In a medium saucepan, melt the butter over medium heat.
  5. Add Sugar: Once the butter is melted, add the granulated sugar. Stir constantly.
  6. Boil: Continue cooking and stirring the butter and sugar mixture until it comes to a boil.
  7. Caramelize: Reduce the heat slightly and continue to cook, stirring constantly, for about 3 minutes, until the mixture turns a golden amber color. Be careful not to burn.
  8. Add Vanilla: Remove the saucepan from the heat and stir in the vanilla extract.
  9. Pour Over Crackers: Immediately pour the hot toffee mixture evenly over the saltine crackers. Use a spatula to spread it evenly.
  10. Sprinkle Chocolate: Sprinkle the chocolate chips evenly over the hot toffee. Let them sit for a minute or two to soften.
  11. Spread Chocolate: Once the chocolate chips are softened, use a spatula to spread the melted chocolate evenly over the toffee.
  12. Add Toppings (Optional): Immediately sprinkle your desired toppings over the melted chocolate. Press nuts gently into the chocolate.
  13. Cool: Place the baking sheet in the refrigerator for at least 30 minutes, or until the toffee is completely set and hardened.
  14. Break: Once the toffee is hardened, remove it from the refrigerator and carefully break it into pieces.
  15. Store: Store the toffee in an airtight container at room temperature for up to a week.

Notes

  • Use good quality ingredients for the best flavor.
  • Watch the toffee carefully to prevent burning. A candy thermometer can be helpful (aim for 300°F/149°C).
  • Work quickly when pouring the toffee and spreading the chocolate, as they will start to harden.
  • Get creative with your toppings!
  • If you don’t have saltine crackers, you can use other types of crackers, such as Ritz crackers or graham crackers.
  • For a richer flavor, use brown sugar instead of granulated sugar.
  • Add a pinch of sea salt to the toffee mixture for an extra salty-sweet kick.
  • If your chocolate is not melting smoothly, add a teaspoon of vegetable oil or shortening to the chocolate chips before melting.
  • To make a vegan version, use vegan butter and vegan chocolate chips.
  • This toffee makes a great gift!
