  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 cup shredded carrots
  • 1 cup thinly sliced bell peppers (any color)
  • 1 cup snap peas, trimmed
  • 1/4 cup chopped green onions
  • 2 tablespoons sesame seeds (toasted, for garnish)
  • Fresh cilantro or parsley (for garnish, optional)

Instructions

  1. Bring a large pot of water to a rolling boil.
  2. Add the soba noodles to the boiling water and cook according to package instructions (4-6 minutes), stirring occasionally.
  3. Taste a noodle to ensure it’s cooked al dente.
  4. Drain the noodles in a colander and rinse under cold water to stop the cooking process.
  5. Allow the noodles to cool completely.
  6. In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, honey (or maple syrup), grated ginger, and minced garlic.
  7. Adjust sweetness or saltiness to your preference and set aside.
  8. Shred the carrots using a box grater or food processor.
  9. Slice bell peppers into thin strips.
  10. Trim the ends of snap peas and slice them in half if large.
  11. Slice green onions thinly, using both white and green parts.
  12. In a large bowl, add cooled soba noodles and pour the sauce over them. Toss gently to coat.
  13. Add shredded carrots, sliced bell peppers, and snap peas. Toss until well combined.
  14. Sprinkle with chopped green onions and toasted sesame seeds. Add fresh cilantro or parsley if desired.
  15. Serve in bowls or on a platter, warm, at room temperature, or chilled.
  16. Optional toppings include sliced avocado, crushed peanuts, or chili flakes.
