These Seven-Layer Chicken Burritos are a flavorful and nutritious meal, featuring a delicious combination of shredded chicken, black beans, corn, and spices, all wrapped in warm tortillas and baked until crispy. - 2 cups cooked chicken, shredded
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup cooked rice (white or brown)
- 1 cup salsa (your choice of heat)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup sour cream
- 4 large flour tortillas
- 1 avocado, sliced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- In a large mixing bowl, combine the shredded chicken, black beans, corn, and cooked rice.
- Add the salsa to the mixture, adjusting the amount based on your preferred spice level.
- Sprinkle in the cumin and chili powder, and season with salt and pepper to taste. Mix everything together until well combined.
- Heat a large skillet over medium heat and add the olive oil.
- Once the oil is hot, place one tortilla in the skillet for about 30 seconds until warm and pliable. Remove and repeat for the remaining tortillas, stacking them on a plate.
- Take one warm tortilla and lay it flat. Add a generous scoop of the chicken filling in the center (about 1/4 of the mixture).
- Layer shredded cheese on top of the filling.
- Add a dollop of sour cream on top of the cheese.
- Place a few slices of avocado on top and sprinkle with fresh cilantro.
- Fold in the sides of the tortilla and roll it up from the bottom to the top, tucking in the sides as you go. Repeat for the remaining tortillas and filling.
- Preheat your oven to 375°F (190°C).
- Place the assembled burritos seam-side down in a greased baking dish. Pour any leftover salsa over the top if desired.
- Cover the baking dish with aluminum foil and bake for about 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the tops are golden brown and crispy.
- Once baked, remove from the oven and let cool slightly before serving.
- Garnish with additional cilantro if desired and serve with extra salsa or sour cream on the side.
