Skinny Coconut Daiquiri Drink: A Refreshing Low-Calorie Cocktail Recipe

  • Author: Dottie
  • Total Time: 10 minutes
  • Yield: 1 serving 1x

Description

This Skinny Coconut Daiquiri is a light and refreshing cocktail made with light rum, fresh lime juice, and coconut water, perfect for summer gatherings or a relaxing evening at home. Enjoy its tropical flavors while keeping it guilt-free!

Ingredients

Scale
  • 2 oz light rum
  • 1 oz fresh lime juice
  • 1 oz coconut water
  • 1 oz simple syrup (or to taste)
  • 1 cup ice
  • Fresh lime wedges, for garnish
  • Shredded coconut, for garnish (optional)

Instructions

  1. Gather Your Ingredients: Start by collecting all the ingredients listed above. Make sure you have fresh limes for the juice, as it makes a significant difference in flavor compared to bottled lime juice.
  2. Juicing the Limes: Cut the limes in half and use a citrus juicer or reamer to extract the juice. You’ll need about one lime for 1 oz of juice, but it’s always good to have an extra lime on hand just in case.
  3. Measure the Ingredients: Use a jigger or measuring spoons to measure out the light rum, fresh lime juice, coconut water, and simple syrup. This ensures that your daiquiri will have the perfect balance of flavors.
  4. Prepare the Simple Syrup: If you don’t have simple syrup on hand, you can easily make it by combining equal parts sugar and water in a small saucepan. Heat over medium heat, stirring until the sugar dissolves completely. Allow it to cool before using.
  5. Add Ingredients to Blender: In a blender, combine the measured light rum, fresh lime juice, coconut water, and simple syrup.
  6. Add Ice: Add about 1 cup of ice to the blender. This will give your daiquiri that refreshing slushy texture. If you prefer a thicker drink, feel free to add more ice.
  7. Blend Until Smooth: Secure the lid on the blender and blend on high speed until the mixture is smooth and creamy. This should take about 30 seconds to 1 minute. If the mixture is too thick, you can add a little more coconut water to help it blend.
  8. Taste and Adjust: Once blended, taste your daiquiri. If you prefer it sweeter, add a little more simple syrup and blend again. If it’s too strong, you can add a splash more coconut water or lime juice to balance it out.
  9. Prepare Your Glasses: Choose your favorite cocktail glasses. I love using chilled coupe glasses for a classic look. If you want to get fancy, you can rim the glasses with shredded coconut. To do this, moisten the rim with a lime wedge and dip it into a plate of shredded coconut.
  10. Pour the Daiquiri: Carefully pour the blended daiquiri into the prepared glasses. You want to fill them to the brim for that perfect presentation.
  11. Garnish: Add a fresh lime wedge on the rim of each glass for a pop of color. If you’re feeling extra indulgent, sprinkle a little shredded coconut on top of the drink for added texture and flavor.
  12. Serve Immediately: These daiquiris are best enjoyed fresh, so serve them right away while they’re cold and frosty.

Notes

  • This daiquiri pairs wonderfully with light appetizers like shrimp cocktails, fresh ceviche, or even a tropical fruit platter.
  • If you have any leftovers, store the daiquiri in the refrigerator for a few hours and give it a good stir before serving again.
  • Feel free to experiment with flavors by adding fresh fruits like strawberries, mangoes, or pineapples to the blender.
  • For a non-alcoholic version, omit the rum and replace it with more coconut water or a splash of soda water.
