  • Salt and pepper, to taste
  • 4 slices of American cheese
  • 4 burger buns (preferably brioche)
  • Butter, for toasting the buns
  • Optional toppings: lettuce, tomato, pickles, onions
  • 1/2 cup mayonnaise
  • 1/4 cup cooked and crumbled bacon (about 4 slices)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika

Instructions

  1. In a medium mixing bowl, combine the mayonnaise, crumbled bacon, Dijon mustard, apple cider vinegar, garlic powder, and smoked paprika.
  2. Using a whisk or a fork, mix everything together until it’s well combined and smooth. Ensure the bacon is evenly distributed throughout the sauce.
  3. Season the sauce with salt and pepper to taste. Start with a pinch of each and adjust as needed.
  4. Cover the bowl with plastic wrap or transfer the sauce to an airtight container. Refrigerate for at least 30 minutes to let the flavors meld together.
  5. Divide the ground beef into four equal portions, about 4 ounces each. Form them into loose balls without overworking the meat.
  6. Preheat a cast-iron skillet or griddle over medium-high heat until hot.
  7. Place the beef balls onto the skillet, leaving enough space between them. You should hear a sizzle!
  8. Press down firmly on each beef ball with a sturdy spatula to flatten it into a patty, creating a thin, crispy edge while keeping the center juicy.
  9. Season the patties generously with salt and pepper.
  10. Cook the patties for about 2-3 minutes without moving them to form a nice crust.
  11. Flip the patties using the spatula and immediately place a slice of American cheese on top of each patty. Cover the skillet with a lid for about 1 minute to help the cheese melt.
  12. In a separate pan, melt a little butter over medium heat and toast the burger buns cut-side down until golden brown.
  13. Spread a generous amount of the Baconnaise sauce on the bottom half of each toasted bun.
  14. Place a cheesy smash burger patty on top of the sauce.
  15. Add any additional toppings you desire, such as lettuce, tomato slices, pickles, and onions.
  16. Top it off with the other half of the toasted bun.
  17. Repeat the assembly process for the remaining burgers.
