- 1 pound ground beef (80/20 blend)
- Salt and pepper, to taste
- 4 slices of American cheese
- 4 burger buns (preferably brioche)
- Butter, for toasting the buns
- Optional toppings: lettuce, tomato, pickles, onions
- 1/2 cup mayonnaise
- 1/4 cup cooked and crumbled bacon (about 4 slices)
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika

- In a medium mixing bowl, combine the mayonnaise, crumbled bacon, Dijon mustard, apple cider vinegar, garlic powder, and smoked paprika.
- Using a whisk or a fork, mix everything together until its well combined and smooth. Ensure the bacon is evenly distributed throughout the sauce.
- Season the sauce with salt and pepper to taste. Start with a pinch of each and adjust as needed.
- Cover the bowl with plastic wrap or transfer the sauce to an airtight container. Refrigerate for at least 30 minutes to let the flavors meld together.
- Divide the ground beef into four equal portions, about 4 ounces each. Form them into loose balls without overworking the meat.
- Preheat a cast-iron skillet or griddle over medium-high heat until hot.
- Place the beef balls onto the skillet, leaving enough space between them. You should hear a sizzle!
- Press down firmly on each beef ball with a sturdy spatula to flatten it into a patty, creating a thin, crispy edge while keeping the center juicy.
- Season the patties generously with salt and pepper.
- Cook the patties for about 2-3 minutes without moving them to form a nice crust.
- Flip the patties using the spatula and immediately place a slice of American cheese on top of each patty. Cover the skillet with a lid for about 1 minute to help the cheese melt.
- In a separate pan, melt a little butter over medium heat and toast the burger buns cut-side down until golden brown.
- Spread a generous amount of the Baconnaise sauce on the bottom half of each toasted bun.
- Place a cheesy smash burger patty on top of the sauce.
- Add any additional toppings you desire, such as lettuce, tomato slices, pickles, and onions.
- Top it off with the other half of the toasted bun.
- Repeat the assembly process for the remaining burgers.
