Strawberry Pineapple Mojito: A Tropical Twist on a Classic Cocktail

  • Total Time: 5 minutes
  • Yield: 1 serving 1x

Description

A refreshing mojito with sweet strawberries and tangy pineapple, blended with mint, lime, rum, and club soda for a vibrant cocktail.

Ingredients

Scale
  • 10 fresh mint leaves
  • 1/2 lime, cut into wedges
  • 2 tablespoons granulated sugar (or simple syrup to taste)
  • 1/2 cup fresh strawberries, hulled and quartered
  • 1/2 cup fresh pineapple chunks
  • 2 ounces white rum
  • 4 ounces club soda, chilled
  • Ice cubes
  • Strawberry and pineapple slices, for garnish (optional)

Instructions

  1. Muddle the Mint and Lime: In a sturdy glass (a highball glass works perfectly), gently muddle the mint leaves and lime wedges together. You want to release the mint’s oils and the lime’s juice, but be careful not to over-muddle, which can make the mint bitter. A few gentle presses with a muddler will do the trick. If you don’t have a muddler, the back of a wooden spoon works in a pinch.
  2. Add Sugar and Fruit: Add the sugar (or simple syrup) to the glass. Then, add the quartered strawberries and pineapple chunks.
  3. Muddle Again: Now, gently muddle the strawberries and pineapple with the mint and lime mixture. Again, be careful not to overdo it. You want to break down the fruit slightly to release their juices and flavors, but you don’t want to pulverize them. We’re aiming for a pulpy, fragrant base.
  4. Add the Rum: Pour the white rum into the glass over the muddled fruit and mint.
  5. Stir Gently: Give the mixture a gentle stir to combine the rum with the fruit and mint base.
  6. Add Ice: Fill the glass almost to the top with ice cubes. Crushed ice is great if you have it, but regular ice cubes work just fine.
  7. Top with Club Soda: Top the glass off with chilled club soda. The club soda adds a refreshing fizz that really makes this mojito sing.
  8. Stir Lightly: Give the mojito a very gentle stir to combine all the ingredients. Be careful not to over-stir, as you don’t want to lose the fizz from the club soda.
  9. Garnish (Optional): Garnish with a strawberry slice and a pineapple wedge on the rim of the glass. You can also add a sprig of fresh mint for an extra touch of freshness.
  10. Serve Immediately: Serve your Strawberry Pineapple Mojito immediately and enjoy! This drink is best enjoyed fresh, so don’t let it sit for too long before drinking.

Notes

  • Adjust the sweetness to your liking by adding more or less sugar or simple syrup.
  • Experiment with other fruits like raspberries, blueberries, or mangoes.
  • For a mocktail, omit the rum and replace it with more club soda or sparkling water. Add a splash of pineapple juice for extra flavor.
  • Infuse the rum with strawberries or pineapple for an extra layer of flavor.
  • Use flavored simple syrups like strawberry or pineapple.
  • Add a thin slice of jalapeño for a spicy kick.
  • Make a batch ahead of time by multiplying the ingredients and mixing in a pitcher. Add club soda just before serving.
  • Use a good quality white rum for the best flavor.
  • Fresh ingredients are crucial for a delicious mojito.
