  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 pre-made pie crust (store-bought or homemade)
  • 1 cup whipped cream (for serving)

Instructions

  1. Wash the berries thoroughly under cold water. Place them in a colander and gently shake to remove excess water. Remove any stems or leaves from the strawberries and slice them into halves or quarters.
  2. Slice the peaches into thin wedges. Peeling is optional; the skin adds texture and flavor.
  3. In a large mixing bowl, combine the mixed berries and sliced peaches. Add the granulated sugar, lemon juice, vanilla extract, cornstarch, ground cinnamon, and salt. Gently toss until the fruit is well coated.
  4. Let the fruit mixture sit for about 15-20 minutes to allow the flavors to meld and juices to develop.
  5. Preheat your oven to 375°F (190°C).
  6. If using a store-bought pie crust, place it in a 9-inch pie dish. For homemade, roll it out to fit the dish and transfer carefully.
  7. Poke small holes in the bottom of the crust with a fork to prevent puffing. Chill in the refrigerator for about 10 minutes if desired.
  8. Bake the crust for 10-12 minutes until lightly golden. Remove from the oven and let cool slightly.
  9. Pour the berry and peach filling into the baked pie crust, spreading it evenly. Include all the juices.
