- 1 (32 oz) bag of frozen tater tots
- 1 lb breakfast sausage
- 1 cup diced onion
- 1 cup diced bell pepper
- 8 large eggs
- 2 cups milk
- 2 cups shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley or chives for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, add the breakfast sausage. Break it apart as it cooks, stirring occasionally until browned and fully cooked, about 5-7 minutes. If using lean sausage, add a little olive oil to prevent sticking.
- Add the diced onion and bell pepper to the skillet with the cooked sausage. Sauté for about 3-4 minutes until the vegetables are tender and the onions are translucent.
- In a large mixing bowl, combine the cooked sausage and vegetable mixture with the frozen tater tots. Gently stir to mix everything together.
- In another bowl, crack the 8 large eggs and whisk until well beaten.
- To the beaten eggs, add 2 cups of milk, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and a pinch of salt and pepper. Whisk until fully combined.
- Stir in 1 cup of shredded cheddar cheese into the egg mixture.
- In a greased 9×13 inch baking dish, spread the tater tot, sausage, and vegetable mixture evenly across the bottom.
- Carefully pour the egg and cheese mixture over the tater tot layer. Gently press down on the tater tots to help them soak up some of the egg mixture.
- Sprinkle the remaining 1 cup of shredded cheddar cheese on top.
- Place the casserole in the preheated oven and bake for 45-50 minutes, until the egg is set in the center and the top is golden brown and bubbly. Cover loosely with aluminum foil if the top browns too quickly.
- Insert a knife into the center; if it comes out clean, the casserole is ready. If not, bake for a few more minutes.
- Let the casserole cool for about 10-15 minutes before cutting.
- Optionally, sprinkle fresh parsley or chives on top.
- Cut into squares and serve warm, pairing with fresh fruit or a light salad.
Notes
- Feel free to customize the protein by using bacon, ham, or a meat alternative.
- This casserole can be prepared the night before; just cover and refrigerate before baking. Add a few extra minutes to the baking time if baking from cold.
