  • 1 (32 oz) bag of frozen tater tots
  • 1 lb breakfast sausage
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 8 large eggs
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add the breakfast sausage. Break it apart as it cooks, stirring occasionally until browned and fully cooked, about 5-7 minutes. If using lean sausage, add a little olive oil to prevent sticking.
  3. Add the diced onion and bell pepper to the skillet with the cooked sausage. Sauté for about 3-4 minutes until the vegetables are tender and the onions are translucent.
  4. In a large mixing bowl, combine the cooked sausage and vegetable mixture with the frozen tater tots. Gently stir to mix everything together.
  5. In another bowl, crack the 8 large eggs and whisk until well beaten.
  6. To the beaten eggs, add 2 cups of milk, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and a pinch of salt and pepper. Whisk until fully combined.
  7. Stir in 1 cup of shredded cheddar cheese into the egg mixture.
  8. In a greased 9×13 inch baking dish, spread the tater tot, sausage, and vegetable mixture evenly across the bottom.
  9. Carefully pour the egg and cheese mixture over the tater tot layer. Gently press down on the tater tots to help them soak up some of the egg mixture.
  10. Sprinkle the remaining 1 cup of shredded cheddar cheese on top.
  11. Place the casserole in the preheated oven and bake for 45-50 minutes, until the egg is set in the center and the top is golden brown and bubbly. Cover loosely with aluminum foil if the top browns too quickly.
  12. Insert a knife into the center; if it comes out clean, the casserole is ready. If not, bake for a few more minutes.
  13. Let the casserole cool for about 10-15 minutes before cutting.
  14. Optionally, sprinkle fresh parsley or chives on top.
  15. Cut into squares and serve warm, pairing with fresh fruit or a light salad.

  • Feel free to customize the protein by using bacon, ham, or a meat alternative.
  • This casserole can be prepared the night before; just cover and refrigerate before baking. Add a few extra minutes to the baking time if baking from cold.
