  • 2 cups sparkling water or club soda
  • Ice cubes

Instructions

  1. Gather fresh pineapple and mango, ensuring they are ripe for the best flavor.
  2. In a blender, combine the pineapple and mango chunks. Blend until smooth, or to your desired texture.
  3. Taste the puree; if you prefer it sweeter, add honey or agave syrup and blend briefly to mix.
  4. Rinse the fresh mint leaves under cold water and pat dry.
  5. In a large mixing bowl or pitcher, add the mint leaves. Use a muddler or the back of a spoon to gently press down on the mint to release its oils.
  6. Squeeze the juice of one lime into the bowl with the muddled mint.
  7. Pour the fruit puree into the bowl with the mint and lime juice. Stir gently to combine.
  8. Taste the mixture again; add more honey or agave syrup if desired and stir until dissolved.
  9. Slowly add the sparkling water or club soda to the mixture, stirring gently to combine.
  10. Fill your favorite glasses with ice cubes, about halfway.
  11. Pour the tropical mojito mixture over the ice, filling each glass about three-quarters full.
  12. Garnish each glass with a sprig of fresh mint, a slice of lime, and a wedge of pineapple.
