  • 2 cans of tuna (5 oz each), drained
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 cup diced bell pepper (any color)
  • 1/4 cup finely chopped red onion
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 4 large flour tortillas
  • 2 tablespoons olive oil or butter (for cooking)
  • Optional toppings: sour cream, salsa, guacamole, or fresh cilantro

Instructions

  1. In a medium-sized mixing bowl, combine the drained tuna, diced bell pepper, and chopped red onion.
  2. Add the mayonnaise and Dijon mustard to the bowl. Stir well to combine all the ingredients.
  3. Sprinkle in the garlic powder, onion powder, black pepper, and salt. Mix everything together until the tuna is evenly coated.
  4. Fold in the shredded cheese, reserving some for topping if desired.
  5. Take one flour tortilla and lay it flat. Spoon about 1/4 of the tuna mixture onto one half of the tortilla.
  6. Fold the tortilla in half, covering the tuna mixture. Press down gently to seal. Repeat with remaining tortillas and mixture.
  7. If you reserved cheese, sprinkle it on top of the tuna mixture before folding.
  8. Heat a large skillet over medium heat. Add 1 tablespoon of olive oil or butter and let it melt.
  9. Place one folded quesadilla in the pan. Cook for 3-4 minutes until golden brown and crispy.
  10. Flip the quesadilla and cook for another 3-4 minutes until the other side is golden and cheese is melted. Adjust heat if necessary.
  11. Transfer to a cutting board and let sit for a minute before cutting into wedges. Repeat with remaining quesadillas.
  12. Arrange quesadilla wedges on a serving platter and serve warm.
  13. Garnish with fresh cilantro or extra cheese if desired.
  14. Serve with toppings like sour cream, salsa, and guacamole. Enjoy!
