- 1 box of yellow cake mix (15.25 oz)
- 1 cup of water
- 1/2 cup of vegetable oil
- 3 large eggs
- 1 package (3.4 oz) instant pistachio pudding mix
- 1 cup of crushed pineapple, drained
- 1 cup of chopped pecans or walnuts (optional)
- 1 cup of mini marshmallows
- 1 container (8 oz) whipped topping (like Cool Whip)
- 1/2 cup of powdered sugar
- 1/2 cup of chopped pecans or walnuts for topping (optional)
- Maraschino cherries for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the yellow cake mix, water, vegetable oil, and eggs. Blend until smooth (2-3 minutes).
- Add the instant pistachio pudding mix and mix until fully incorporated.
- Fold in the crushed pineapple, chopped nuts (if using), and mini marshmallows gently.
- Grease and flour a 9×13 inch baking pan.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 30-35 minutes, or until a toothpick comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- In a medium bowl, combine the whipped topping and powdered sugar. Mix until smooth and creamy.
- Optionally, add a teaspoon of vanilla or almond extract for extra flavor.
- Once cooled, spread the frosting evenly over the cake.
- Sprinkle additional chopped nuts on top if desired.
- Garnish with maraschino cherries for a pop of color.
- Cover and refrigerate for at least 2 hours before serving.
- Cut the cake into squares or rectangles.
- Serve on dessert plates, optionally adding a dollop of whipped topping.
