Ingredients
Scale
- 1 medium-sized watermelon
- 1 cup strawberries, hulled and halved
- 1 cup blueberries
- 1 cup pineapple, diced
- 1 cup cucumber, diced
- 1/4 cup fresh mint leaves, chopped
- 1 lime, juiced
- 2 tablespoons honey (optional)
- Pinch of salt
Instructions
- Select a ripe watermelon, cut it in half lengthwise, and then into quarters. Slice each quarter into bite-sized cubes and scoop them into a large mixing bowl.
- Rinse strawberries, hull, and halve them before adding to the bowl. Rinse blueberries and add them directly. If using a whole pineapple, peel, core, and dice it, then add to the bowl. Wash cucumber, dice it (peeling optional), and add to the fruit mixture.
- Rinse and chop fresh mint leaves, then sprinkle over the fruit mixture. In a small bowl, whisk together lime juice and honey (if using), then drizzle over the salad. Add a pinch of salt to enhance sweetness.
- Gently toss the salad with a large spoon, being careful not to mash the fruits. Taste and adjust sweetness or tanginess as desired.
- Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to meld flavors and chill.
- After chilling, give the salad another gentle toss and serve in individual bowls or on a platter, garnished with whole mint leaves if desired.
Notes
- For added sweetness, adjust the amount of honey to your preference.
- This salad is best enjoyed fresh but can be stored in an airtight container in the refrigerator for 1-2 days.
- To maintain freshness, consider preparing the fruits separately and combining them just before serving.
