  • 1 cup strawberries, hulled and halved
  • 1 cup blueberries
  • 1 cup pineapple, diced
  • 1 cup cucumber, diced
  • 1/4 cup fresh mint leaves, chopped
  • 1 lime, juiced
  • 2 tablespoons honey (optional)
  • Pinch of salt

Instructions

  1. Select a ripe watermelon, cut it in half lengthwise, and then into quarters. Slice each quarter into bite-sized cubes and scoop them into a large mixing bowl.
  2. Rinse strawberries, hull, and halve them before adding to the bowl. Rinse blueberries and add them directly. If using a whole pineapple, peel, core, and dice it, then add to the bowl. Wash cucumber, dice it (peeling optional), and add to the fruit mixture.
  3. Rinse and chop fresh mint leaves, then sprinkle over the fruit mixture. In a small bowl, whisk together lime juice and honey (if using), then drizzle over the salad. Add a pinch of salt to enhance sweetness.
  4. Gently toss the salad with a large spoon, being careful not to mash the fruits. Taste and adjust sweetness or tanginess as desired.
  5. Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to meld flavors and chill.
  6. After chilling, give the salad another gentle toss and serve in individual bowls or on a platter, garnished with whole mint leaves if desired.
