- 4 boneless, skinless chicken breasts
- 1 cup mayonnaise
- 1/4 cup apple cider vinegar
- 2 tablespoons Dijon mustard
- 1 tablespoon honey
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 4 hamburger buns
- 1 cup coleslaw (optional, for topping)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your grill or stovetop grill pan over medium-high heat. If using a charcoal grill, ensure the coals are hot.
- Place the chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1 inch.
- Season both sides of the chicken breasts with salt, pepper, and a sprinkle of smoked paprika.
- Grill the chicken for 6-7 minutes on one side without moving, then flip and grill for another 6-7 minutes until the internal temperature reaches 165°F (75°C).
- Remove the chicken from the grill and let it rest for 5 minutes.
- In a medium bowl, combine mayonnaise, apple cider vinegar, Dijon mustard, honey, garlic powder, onion powder, and smoked paprika.
- Whisk until smooth and adjust seasoning with salt and pepper. Refrigerate for 30 minutes if desired.
- Shred the rested chicken into bite-sized pieces using two forks.
- In a large bowl, mix the shredded chicken with half of the white BBQ sauce, adding more if desired.
- Toast the hamburger buns on the grill for 1-2 minutes until golden brown.
- Place a generous portion of the BBQ chicken mixture on the bottom half of each bun.
- Top with coleslaw if using, and drizzle with more white BBQ sauce if desired.
- Place the top half of the bun on each sandwich.
- Serve warm, garnished with fresh parsley. Offer extra white BBQ sauce on the side for dipping.
- Pair with potato chips, garden salad, or sweet potato fries.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
