  • 4 boneless, skinless chicken breasts
  • 1 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 hamburger buns
  • 1 cup coleslaw (optional, for topping)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your grill or stovetop grill pan over medium-high heat. If using a charcoal grill, ensure the coals are hot.
  2. Place the chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1 inch.
  3. Season both sides of the chicken breasts with salt, pepper, and a sprinkle of smoked paprika.
  4. Grill the chicken for 6-7 minutes on one side without moving, then flip and grill for another 6-7 minutes until the internal temperature reaches 165°F (75°C).
  5. Remove the chicken from the grill and let it rest for 5 minutes.
  6. In a medium bowl, combine mayonnaise, apple cider vinegar, Dijon mustard, honey, garlic powder, onion powder, and smoked paprika.
  7. Whisk until smooth and adjust seasoning with salt and pepper. Refrigerate for 30 minutes if desired.
  8. Shred the rested chicken into bite-sized pieces using two forks.
  9. In a large bowl, mix the shredded chicken with half of the white BBQ sauce, adding more if desired.
  10. Toast the hamburger buns on the grill for 1-2 minutes until golden brown.
  11. Place a generous portion of the BBQ chicken mixture on the bottom half of each bun.
  12. Top with coleslaw if using, and drizzle with more white BBQ sauce if desired.
  13. Place the top half of the bun on each sandwich.
  14. Serve warm, garnished with fresh parsley. Offer extra white BBQ sauce on the side for dipping.
  15. Pair with potato chips, garden salad, or sweet potato fries.
  16. Store leftovers in an airtight container in the refrigerator for up to 3 days.
