Ingredients
Scale
- 1 pound fresh strawberries, hulled and halved
- 8 ounces cream cheese, softened
- 1 cup white chocolate chips
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/2 cup graham cracker crumbs
- 2 tablespoons unsalted butter, melted
Instructions
- In a microwave-safe bowl, combine the white chocolate chips and 1 tablespoon of heavy cream. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth. Be careful not to overheat it, as white chocolate can seize up quickly.
- Once melted, set the bowl aside to cool slightly.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until creamy and smooth, about 2-3 minutes.
- Add the granulated sugar, vanilla extract, lemon juice, and salt to the cream cheese. Continue to beat until well combined and fluffy, about another 2 minutes.
- Pour in the melted white chocolate and mix until fully incorporated.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture using a spatula.
- In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated.
- Press the mixture firmly into the bottom of a 9-inch springform pan or a pie dish.
- Place the crust in the refrigerator to chill.
- Take the hulled and halved strawberries and set them aside.
- Using a piping bag or a zip-top bag with the corner snipped off, fill the bag with the white chocolate cheesecake filling.
- Carefully pipe the cheesecake filling into each strawberry half.
- Once all the strawberries are filled, place them on a serving platter.
- For an extra touch, drizzle some melted white chocolate over the filled strawberries.
- Cover the platter with plastic wrap and place it in the refrigerator for at least 1 hour.
- When ready to serve, remove the strawberries from the fridge. Garnish with a sprinkle of graham cracker crumbs or a few mint leaves.
- Enjoy these delightful white chocolate cheesecake strawberries!
