Fresh strawberries are filled with a creamy white chocolate cheesecake mixture, making them perfect for parties or a delightful dessert at home. These bite-sized delights combine the freshness of fruit with the richness of cheesecake for a truly indulgent experience.

Ingredients

Scale
  • 1 pound fresh strawberries, hulled and halved
  • 8 ounces cream cheese, softened
  • 1 cup white chocolate chips
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/2 cup graham cracker crumbs
  • 2 tablespoons unsalted butter, melted

Instructions

  1. In a microwave-safe bowl, combine the white chocolate chips and 1 tablespoon of heavy cream. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth. Be careful not to overheat it, as white chocolate can seize up quickly.
  2. Once melted, set the bowl aside to cool slightly.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until creamy and smooth, about 2-3 minutes.
  4. Add the granulated sugar, vanilla extract, lemon juice, and salt to the cream cheese. Continue to beat until well combined and fluffy, about another 2 minutes.
  5. Pour in the melted white chocolate and mix until fully incorporated.
  6. In a separate bowl, whip the heavy cream until stiff peaks form.
  7. Gently fold the whipped cream into the cream cheese mixture using a spatula.
  8. In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated.
  9. Press the mixture firmly into the bottom of a 9-inch springform pan or a pie dish.
  10. Place the crust in the refrigerator to chill.
  11. Take the hulled and halved strawberries and set them aside.
  12. Using a piping bag or a zip-top bag with the corner snipped off, fill the bag with the white chocolate cheesecake filling.
  13. Carefully pipe the cheesecake filling into each strawberry half.
  14. Once all the strawberries are filled, place them on a serving platter.
  15. For an extra touch, drizzle some melted white chocolate over the filled strawberries.
  16. Cover the platter with plastic wrap and place it in the refrigerator for at least 1 hour.
  17. When ready to serve, remove the strawberries from the fridge. Garnish with a sprinkle of graham cracker crumbs or a few mint leaves.
  18. Enjoy these delightful white chocolate cheesecake strawberries!
