  • 2 teaspoons gelatin powder
  • 3 tablespoons cold water
  • Fresh fruits (like berries or mango) for topping
  • Mint leaves for garnish (optional)

Instructions

  1. Measure 3 tablespoons of cold water in a small bowl.
  2. Sprinkle the gelatin powder evenly over the water and let it sit for about 5-10 minutes to bloom.
  3. In a medium saucepan, combine the heavy cream and granulated sugar.
  4. Heat over medium, stirring gently until the sugar dissolves (do not boil).
  5. Remove from heat and add the bloomed gelatin mixture, stirring until fully dissolved.
  6. Stir in the vanilla extract and allow the mixture to cool for about 10 minutes.
  7. Once cooled slightly, add the plain yogurt and whisk gently until smooth and lump-free.
  8. Pour the mixture into serving containers, filling them about three-quarters full.
  9. Cover with plastic wrap or lids and refrigerate for at least 4 hours, or overnight.
  10. While the panna cotta sets, prepare your toppings. Wash and dry fresh fruits or make a simple fruit compote by cooking a cup of fruit with a tablespoon of sugar until thickened.
  11. Once set, remove from the refrigerator. If using ramekins, run a knife around the edge to loosen and invert onto a plate.
  12. Top with prepared fruits or fruit compote and garnish with mint leaves if desired.
  13. Serve immediately or keep in the fridge for a few hours before serving. Enjoy the creamy texture paired with fresh fruits!
